Mmmm, look at all of these veggies! It’s a good thing that we have a visitor for the next week to help eat everything! (And yes, I did save the pattypan squash from last week so that we could feast this week. You’re welcome. =] )
Sweet corn: Last week we forgot the sweet corn at the pickup location! =[ So this week, I was especially vigilant during the pickup to ensure that we had some of this classic Illinois staple.
Onions: You know the drill. These go in everything!
Cucumbers: Holy cow – four GIANT cucumbers! I love cucumbers, but this is starting to get ridiculous! Maybe we should hold a contest to win two cucumbers – best recipe posted below wins!
Eggplant: D’s planning on making baba ganoush tomorrow night, so the big one will probably wind up in that.
Peppers, peppers, and more peppers: Bell pepper, roasting pepper, and hot peppers (three varieties – green, purple, and yellow). D will likely be in charge of all of these.
Squash: More pattypan (as mentioned above), plus some cool striped summer squash. And a zucchini. I may start freezing some of these soon.
Potatoes: Mmmm, potatoes. Such starchy goodness. I’m thinking that I may finally get around to making those roasted potatoes I’ve talked about in previous weeks but have never made.
Green beans: They’re back! I think I’ll stir fry these in some olive oil and garlic, and then just drool over the product.
