K: Mint Cooking Spree, Part 5 – Mint Ice Cream

To properly round out our mint cooking spree, we needed a dessert.  Since we’re getting into the summer, I decided that I would try my hand at making ice cream!

Now, I admit that I love ice cream, but I generally prefer to buy it – it’s easier that way, and then I don’t have a ready supply of the stuff in my freezer for me to eat.  The delicious creaminess, the delightful smoothness, the decadent flavors…

Anyways, if there was ever a time to make a mint ice cream, this was the time.  I actually had to borrow the ice cream maker adapter for my kitchen aid from a friend at work to do this, and I was pleasantly surprised by how well it worked.  (Especially considering that I made it when it was probably >82* in our kitchen.)

Do you notice how it’s not green?  That’s how mint-flavored things should look.  I used a basic recipe for ice cream (you can find tons of these online or with your ice cream maker), then added a bit of diced mint leaves and about half a cup of chocolate chips.  The texture was pretty soft (I think the kitchen heat didn’t help much here), but it was tasty and refreshing!
